Lobster with fresh cheese cream

Ingredients (2 persons)

lobster, 1 of kg.
shrimps, 4
fresh cheese
milk cream
small onions
fish "fumet"
salt
pepper
brandy
butter

 

Preparation: Bake the lobster for 12 minutes. When done, clean thoroughly and cut into slices. Heat butter in a frying pan, add the small onions, thinly chopped, and sauté for a while. Add the lobster and prawns and flambé with brandy. Remove the lobster and prawns, add a little fish ‘fumet’ and the fresh cheese. Wait till it reduces a little. Add the milk cream, a pinch of salt and some pepper. Cook for 10 minutes till it is thick and sift. Finally, cover the lobster and prawns with cream.
