Rice with octopus

Ingredients (4 persons)

octopus, 2 kilos.
onions, 4 small and tender
red pepper, 1
tomatos, 2
cayenne pepper, 1/2 spoonfuls
oil, 4 spoonfuls
rice, 2 big spoonfuls

 

Preparation: Boil the octopus. Once it is cooked, toss the chopped onions, the peppers , the tomatos and the octopus cut into pieces in oil in a earthenware casserole, stirring continuously in order not to stick it. Once it is brown, add a spoonful of water of the boiled octopus and leave it all on the fire for a few minutes, adding more water if it were necessary. When everything is ready, add two level tablespoonfuls of rice. Leave it toss in oil for a few minutes and add 10 tablespoonfuls of water approximately. Salt it and leave it boil for 20 minutes. Serve it hot.
