Salmon Hotpot

Ingredients (4 persons)

salmon, 1 1/4 kg.
potatoes, 1 kg.
ripe tomatoes, 3 peeled
garlic, 3 peeled
green pepper, 1
leaf, 1 bay
parsley, 1 sprig, chopped
olive oil, 3 tablespoons

 

Preparation: Dice the potatoes in a casserole. Add garlic, parsley, pepper, the bay leaf and water enough to cover the potatoes.

When the potatoes are half-cooked, add salmon, also diced. After 5 minutes of cooking, add the tomato, thinly chopped, and the onion sautéed with 3 tablespoons of oil. Add salt to taste and serve very hot.
