Preparation:
Chop
the onion, garlic and carrot and sauté with a little parsley in a frying
pan. In a separate frying pan, reduce the brandy and wine. Place the
salmon in a casserole, pass the ‘fumet’, the carrot, onion and garlic
through a sieve and add the single cream.
Cover the salmon with this sauce; add the
prawns and clams and bake for 5 minutes. |
