Salmon in Ribeiro Wine

Ingredients (6 persons)

salmon, 6 fillets of 200 gr. Each
fish stock ("fumet"), 1 lt.
onion, 1
carrot, 1
Ribeiro white wine, 1/2 lt.
brandy, 1 cup
oil, 4 tablespoons
single cream, 4 tablespoons
parsley
peeled prawns, 200 gr.
clams, 150 gr.

 

Preparation: Chop the onion, garlic and carrot and sauté with a little parsley in a frying pan. In a separate frying pan, reduce the brandy and wine. Place the salmon in a casserole, pass the ‘fumet’, the carrot, onion and garlic through a sieve and add the single cream.

Cover the salmon with this sauce; add the prawns and clams and bake for 5 minutes.
