Scallops
in Albariño Wine |

Preparation: Heat oil in a casserole. Add the chopped parsley, onion and ham.
Sauté slowly and add a cup of Albariño till the sauce thickens. In a
platter, place the shelled scallops on a bed of cooking salt. Pour the
lemon juice and the sauce from the fry over it. Sprinkle with breadcrumbs.
Bake in a high oven for 10 minutes. Remove and dress with chopped parsley.
