Scallops in Albariño Wine

Ingredients (6 persons)

scallops, 12 (bigs)
olive oil, 3 dl.
garlic, 6 chopped cloves
onion, 1 (chopped)
ham, 100 gr. (chopped)
Albariño wine, 1 cup
bay, 2 leaves
parsley, 1 sprig
breadcrumbs, 50 gr.
lemons, 2
cooking salt

 

Preparation: Heat oil in a casserole. Add the chopped parsley, onion and ham. Sauté slowly and add a cup of Albariño till the sauce thickens. In a platter, place the shelled scallops on a bed of cooking salt. Pour the lemon juice and the sauce from the fry over it. Sprinkle with breadcrumbs. Bake in a high oven for 10 minutes. Remove and dress with chopped parsley.
