Squid stuffed with ham

Preparation: Clean the squid thoroughly, removing the gullet and skin and
keeping the heads aside. Drain well. Sauté gently the ham in a frying
pan. Make a roll with the stuffing you like and fill each squid. Close the
head with a toothpick so that the filling does not fall out.
Sauté the
vegetables in a casserole with oil. Add the squid, which should be covered
with the sautéed vegetables. Pour a
dash of sherry, cover with a lid, and let cook for approximately 10
minutes. |
