Squid with rice

Ingredients (4 persons)

big squid, 2 kg.
rice, 250 gr.
onions, 2
green pepper, 1
paprika, 1 teaspoon
saffron, 1 strand
tomatoes, 2
oil
salt

 

Preparation: Heat oil in a casserole. Sauté the thinly chopped onions and pepper. Add the squids, cut into large pieces, and cook for a few minutes. Add the tomatoes, paprika, saffron strand and simmer until tender. Add rice, the squid ink and the 2 cups of water. Cook for 15 minutes. Season to taste, remove from heat and serve.
